Mid-to-late summer is blueberry season, and we look forward to it all year long. These brilliant orbs, favorites of children and bears everywhere, are rich in fiber and antioxidants. A quick stovetop jam is a great way to use blueberries that are starting to get a tad squishy or if you have gotten into an add-heat-to-everything habit after the recent outbreaks of food-borne illnesses. This one is boosted with textural chia seeds and heaps of LOAM, and results in a jam you’ll want to smear on everything.

Recipe: Fiber Jam-Packed Blueberry Jam

Ingredients

  • 2 cups fresh or frozen blueberries

  • 2 tablespoons chia seeds

  • 1-2 tablespoons maple syrup (optional)

  • 1 tablespoon lemon juice

  • ½ teaspoon vanilla extract

  • A pinch salt

  • 3 servings of LOAM (6 orange spoonfuls from our Welcome Kit!)

Method

Add blueberries to a small saucepan over medium heat

Stir occasionally for 5-8 minutes until the berries burst and become juicy

Mash the berries with a fork or potato masher, leaving some chunks if desired

Stir in lemon juice, maple syrup, vanilla extract, and salt

Remove from the heat and stir in chia seeds and LOAM

Transfer to a jar and refrigerate until completely cool, for a couple hours

Dollop on top of ricotta toast, yogurt, or oatmeal. Spread as the perfect counterpart to peanut butter sandwiches. Or just eat right off the spoon!
