Blend them smooth and they disappear into the batter completely, giving you that dense, fudgy texture that's actually really hard to achieve with flour alone. This particular recipe is deeply chocolatey, naturally sweetened, and ready in about 30 minutes.

One can of black beans brings 15g of fiber to the party, which shakes out to about 4g per brownie by the time you slice them up. Make them once and they'll become a permanent fixture in your fridge—and consistent, tasty fuel for your microbiome.

Recipe: Fiberful Black Bean Brownies

Ingredients

  • 1 can black beans, drained + rinsed (15g fiber)

  • 1/4 cup cocoa powder (7g fiber)

  • 1/4 cup maple syrup

  • 1/4 cup coconut sugar

  • 1/3 cup melted butter or coconut oil

  • 1/2 tsp baking powder

  • pinch of salt

  • 2 eggs

  • chocolate chips for topping

Method

  1. Blend all ingredients together until smooth.

  2. Top with chocolate chips and bake at 350°F for 25 minutes. 

  3. Let cool completely before slicing and serving.

Makes approx. 6 large brownies (~4g fiber per brownie)

Pro tip: Wash those brownies down with some fiber-infused water or non-dairy milk.
