If you're an avid scroller, you may have already seen it: a frozen fruit, a splash of something creamy, and a few seconds of scraping that turns into the dreamiest soft serve. It’s the perfect refreshing treat for the sweltering dog days of summer. We gave it our own gut-sy spin (because we can’t help but hide fiber in all the most unexpected places!).
Our version leans on tangy kefir for that frozen yogurt feel and folds in a sachet of LOAM for a sneaky dessert fiber add to get you to your daily recommended 30 grams. Stop by your local farmer's market this week to see what's in season and give it a try.
Recipe: Viral Fiber-Swirled Fruit Froyo
Ingredients

Fresh local fruits of your choosing, halved (melons and other soft, scoopable fruits work beautifully)

1/2 cup kefir, plain or vanilla

1 sachet of LOAM

2 tbsp sweetened condensed milk, or honey to taste

A pinch of salt

Toppings of your choice to decorate
Method
Around 12 hours ahead, halve your fruit and scoop out a shallow well in the center of each half. Wrap and freeze until solid.
Pour the kefir into the frozen well, then add a sachet or scoop of LOAM, sweetened condensed milk and a pinch of salt.
Using a spoon, scrape the frozen fruit into the liquid, mixing as you go, until it turns light, fluffy and soft-serve smooth.
Scoop and enjoy right away, or pop it back in the freezer for 20 to 30 minutes for a firmer scoop. Finish with your favorite toppings.
