Beans might be the most underrated food in your kitchen. They're cheap, they're filling, they're packed with prebiotic fiber, and—who would have thought?—they make an incredible brownie. Blend them smooth and they disappear into the batter completely, giving you that dense, fudgy texture that's actually really hard to achieve with flour alone. This particular recipe is deeply chocolatey, naturally sweetened, and ready in about 30 minutes.
One can of black beans brings 15g of fiber to the party, which shakes out to about 4g per brownie by the time you slice them up. Make them once and they'll become a permanent fixture in your fridge—and consistent, tasty fuel for your microbiome.
