Recipe: Ghost Fiber Cookies

Ingredients

  • 1 3⁄4 cups flour

  • 1⁄2 cup unsalted butter

  • 1⁄2 cup coconut sugar

  • 2 servings LOAM Prebiotic Fiber Formula (4 scoops)

  • 1 large egg

  • 1 tsp vanilla extract

  • 1⁄2 tsp baking soda

  • 1⁄2 tsp salt (use less if using salted butter)

  • 1⁄2–3⁄4 cup dark chocolate chips or chopped dark chocolate

  • Cacao nibs or melted chocolate for decoration (optional)

Method

  1. Preheat the oven to 350˚F / 175˚C.

  2. Brown the butter. Melt the butter in a saucepan over medium heat, stirring until golden-brown flecks appear and it smells nutty. Remove from the heat and cool for about 10 minutes.

  3. Mix the wet ingredients. Whisk the butter and coconut sugar together. Add the egg and vanilla and mix until combined.

  4. Mix the dry ingredients. In a separate bowl, combine the flour, baking soda, LOAM and salt. Stir dry ingredient mixture into the wet ingredients until just combined.

  5. Fold in the chocolate gently.

  6. Chill the dough. Refrigerate for 30–60 minutes.

  7. Bake. Scoop into balls and place on a parchment-lined baking sheet. Bake at 350°F for 10 minutes, until the edges are lightly golden and the centers still look slightly soft.

  8. Remove from the oven, add marshmallows to the top. Return to the oven for 2 more minutes, or until the marshmallow begins to melt.

  9. Cool. Leave on the baking sheet for 5–10 minutes before transferring to a cooling rack.

  10. Use cacao nibs or melted chocolate and a piping tip to decorate your ghosts.
