July marks National Ice Cream Month—which is really just permission to make this frozen fiber treat as much as you want! Whipped cream gets you that soft-serve texture, and two sachets of LOAM get you closer to your recommended 30g of daily fiber with no grit or weird mouthfeel.

A few minutes of mixing, a few hours in the freezer, and you've got a scoop that tastes like the real thing.

Recipe: No-Churn High-Fiber Ice Cream

Ingredients

  • 1 cup milk
  • 1.5 cups heavy cream
  • 2 to 3 tbsp honey or liquid sweetener
  • 2 sachets LOAM (20g fiber)
  • 1 tsp vanilla (paste ideal, extract works too)
  • Pinch of salt

Method

Whisk together milk, honey, LOAM, vanilla, and salt. Let sit for 10 minutes so the fiber fully dissolves.

In a separate bowl, whip heavy cream until stiff peaks form.

Gently fold the milk mixture into the whipped cream, or pour it in slowly on low speed if using a stand mixer.

Freeze for 6 to 8 hours.

Scoop, top with choice of fiber-rich fruit, and enjoy!

Makes approx. 7 servings (20g fiber per batch, about 3g per scoop).
